Agave: 100% wild maguey Cupreata.
Proof: 90 (45% ABV).
Production Location: Mochitlan, Guerrero, Mexico.
THE PROCESS
Harvesting of wild ripe maguey Cupreata.
Cooking in a conical stone & earth oven with huamuchíl, dark oak and anono woods.
Milling is done 100% by hand in an ancestral way, with a mallet and ax in a wooden canoe.
Fermenting is done naturally, outdoors, in vats made from ayacahuite wood.
Double distillation is done in a copper still heated by wood.
Bottling is done by hand, filling the bottles by gravity.
TASTING NOTES
View: Crystalline, natural pearl of proof, richer and fuller body.
Smell: Predominant to cooked Agave, smoked directly from the cooking oven, citrus fruits, green notes.
Taste: Softness and persistence in the aftertaste, power, and complexity of the Cupreata Agave.
SUGGESTED TASTING
Serve: Straight in a copita glass, with the option to serve cold (chilled).
Pairing: Aged cheeses, sweet and salty snacks, citrus and seasonal fruit; avoid worm salting.
